Morning Glory Baked Oatmeal
[from Southern In-Law]
(serves 4)
2 cups rolled oats
1 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp ground cardamom
1 medium zucchini, grated
1-2 large carrots, peeled and grated
2 apples, one grated and one diced
1/2 cup unsweetened applesauce
2 tsp vanilla
2 tsp maple syrup
1 cup almond milk
1/2 cup chopped nuts (optional)
Preheat your oven to 355°F.
Prepare 4 single serving ramekins or one large baking dish.
In a large bowl, combine the oats, baking powder, and spices.
Stir in the grated zucchini, carrot, and apple. Add the applesauce, vanilla, maple syrup, and almond milk, and stir once more.
Allow the mixture to sit in the bowl for about 10 minutes to allow moisture to absorb.
Pour into ramekins or baking dish and bake for 35-45 minutes.
This is one of my favorite oatmeal recipes. I can enjoy it for breakfast or lunch. It makes an excellent, nutritious meal that’s perfect for starting the day, eating before a workout or run, or even having for dessert. And it has everything I could ask for in a meal: oats, fruit, vegetables, healthy fats, protein, iron, and best of all, it tastes amazing.
