Blueberry Lemon Overnight Quinoa Chia Porridge with Slivered Almonds.
Made using the same method as my overnight chia oats (here and here), but with twice the amount of chia since pre-cooked quinoa doesn’t absorb as much moisture as rolled oats. I would definitely use less almond milk next time, but the combination of lemon zest, fresh blueberries, almonds, and shredded coconut were a perfect match for the creamy quinoa.
