Peanut Butter Granola
Ingredients
2 cups rolled oats
1/2 cup buckwheat groats
1/4 tsp pink himalayan salt
2-3 tbsp brown sugar
1/4 cup melted coconut oil
1/4 cup purified water
1/2 tsp vanilla
1/4 cup peanut butter
1 tsp cinnamon
Directions
Preheat your oven to 250°F
In a large bowl, mix the rolled oats, buckwheat groats, salt, and sugar.
Stir in the melted coconut oil, water, and vanilla. Mix until everything is combined. Mix in the peanut butter and cinnamon last, breaking up any larger chunks.
Spread the granola on a large baking sheet. Bake for 90 minutes, stirring every 30 minutes. After stirring a third time, bake for 5 to 10 minutes more, or until your granola is a crispy golden brown.
Allow the granola to cool for at least 20 minutes before storing in an air-tight container. Store at room temperature.
